VEGETABLES FRITTERS WITH SWEET AND SOUR SAUCE
Ingredients:
100g (¾ cup) whole wheat flour
Pinch of salt
Pinch of pepper
4tsp olive oil
12tbsp cold water
100g broccoli florets
100g cauliflower florets
1 large carrot, cut into batons
1 sliced red bell pepper
2 beaten eggs white
Oil for deep frying
SAUCE:
150ml pineapple juice
150 vegetable stock
2 tbsp wine vinegar
2 tbsp light brown sugar
2 tsp cornflour ( cornstarch)
2 chopped spring onions
Method:
1. Sieve the flour into a mixing bowl. Add the salt and pepper. Make a well in the centre and gradually beat in the oil and cold water to make a smooth batter.
2. Cook the vegetables in boiling water for about 5 minutes and drain.
3. Whisk the egg white until peaking and fold them into the flour batter.
4. Dip the vegetables into the batter, turning each piece around to coat well. Drain off any excess batter.
5. Heat the oil for deep frying in a deep fat fryer until a cube of bread browns in 30 seconds.
6. Fry the vegetables for about 2 minutes. Remove from the oil with a slotted spoon and drain on paper towels.
7. Place all the sauce ingredients in a pan and bring to boil, stirring constantly until sauce thickens and is clear.
8. Serve with the fritters.
