FRESH COCONUT BURFI

 

Requirements

Ø      1 fresh coconut (about 700-800 gms)

Ø      1 litre buffalo milk

Ø      350 gms sugar

 

For decoration: ½ teaspoon cardamom powder, 1 teaspoon chopped pasta

 

Steps

  1. grate the fresh coconut finely
  2. Mix together the milk, coconut and sugar in a thick bottomed karahi.
  3. Cook on a high flame. Stir occasionally. When the mixture thickens, reduce the flame to minimum. Keep stirring.
  4. When the mixture becomes semi- solid remove from the fire. Spread on 2 greased surface to a thickness of 1.2
  5. Decorate with pista and cardamoms. Cut into pieces.

 

Varieties: Use red, yellow, orange and green food colours to prepare coloured burfies.

 

Makes 25-30 pieces.
